Step by Step

Combine gin, fresh lemon juice, fresh lime juice, heavy cream, simple syrup, orange flower water and egg white in a shaker — no ice. Dry shake very vigorously for at least 30 seconds. Add ice and shake hard for another 1–2 minutes. Fine-strain into a tall Collins glass without ice. Gently pour soda water down the inside wall of the glass until the foam rises above the rim.
