Step by Step

Combine pisco, fresh lime juice, simple syrup and egg white in a shaker. Dry shake vigorously without ice for 15 seconds to build foam. Add ice and shake again until well chilled. Fine-strain into a chilled coupe glass. Dot the foam with 3–4 drops of Angostura bitters.
